Gluten Free Mug Muffin – Sweetened with Honey

This Gluten-Free Mug Muffin is the perfect way to start your day. It’s an easy microwavable breakfast for busy mornings, hectic afternoons, or lazy evenings when you just want a quick, healthy dessert for one. This Microwave Mug Muffin is also gluten free, dairy free, soy free, egg free, oil-free, refined sugar-free, and peanut-free. It is also suitable for vegans and vegetarians. It’s also Paleo-friendly, depending on which type of sweetener you use.


I’m so surprised this is my first time posting a gluten free mug muffin recipe, or as some would call it, a mug cake recipe. I actually make them very often. I usually make mug cakes in the evening when I’m craving a simple dessert for one. This one, however, is perfect for breakfast because it contains a bit of protein from the almond flour and almond butter, and is low in sugar. Making it a great way to start the day. It also only uses honey (or maple syrup) as a healthier sweetener.

How to Make This Gluten Free Mug Muffin

It’s seriously so simple to make this gluten free mug muffin. That’s why it’s a great go-to when you want a sweet treat quickly.

Grab your favorite large microwave-safe mug and grease it with any type of oil or butter.

Add all of your ingredients to the mug.

Mix it VERY well – I usually use a fork in case there are any clumps.

Microwave.

I kept the base of this recipe simple, but you can add in mix-ins or toppings. So go ahead and top your gluten-free mug muffin with chocolate chips, nuts, almond butter, maple syrup, or whatever your heart desires.

Ingredients and Replacement Ideas for this Gluten Free Mug Muffin Recipe

To make your healthy dessert for one, you’ll only need a few ingredients. As mentioned before, this recipe is gluten free, dairy free, and egg free. If you’d like to make it with dairy and/or eggs, though, you can!

This mug muffin recipe contains…

Almond Flour – this makes the muffin gluten free and adds a really nice chewy texture.

Ground Flax Seeds & Milk – this is used to replace eggs for those with an egg allergy. If you don’t want or need to use this, you can just replace both of these ingredients with 1 egg.

Almond Butter – adds a really nice texture and flavor. You can replace this with any nut butter.

Honey – a great, healthy sweetener. You can replace this with any other liquid sweetener, like maple syrup or agave. Also note, I’m not using a lot of honey in this recipe as I want this to be suitable for breakfast. If you want a sweeter dessert-like treat, go ahead and double the honey.

Cinnamon – not necessary, but adds a great flavor.

Baking soda – with such a small recipe, you don’t need a lot, but it is important to help this muffin rise.

Ingredients

  • 4 tablespoons superfine almond flour
  • 1 tablespoon ground flax seeds – alternatively you could use one egg
  • 3 tablespoons milk – any dairy free milk works as well
  • 1 tablespoon almond butter – or peanut butter
  • ½ tablespoon agave, maple syrup, or honey – it's not very sweet with this amount, if you want a sweeter muffin that tastes more like a dessert you should double or triple the amount
  • 1 sprinkle cinnamon
  • teaspoon baking powder

Mix-ins or Topping Ideas (pick and choose)

  • 1 tablespoon chocolate chips
  • 1 tablespoon raisins
  • 1 tablespoon whipped cream – scooped on top after microwaving
  • 1 tablespoon yogurt – scooped on top after microwaving
  • 1 tablespoon chopped nuts

Instructions

  • For this microwave mug muffin you'll need to lightly grease a large microwave-safe coffee mug or a very small bowl.
  • Add all ingredients into your mug and mix very well with a spoon, fork, or whisk.
  • Microwave for 30 seconds to start with, and if necessary add more time in 15-second intervals. Your mug muffin is done when it has risen slightly and is no longer wet to the touch in the center.
  • You can top with more almond butter if you'd like. Enjoy your paleo mug muffin right away while it is still warm.
