This Easter Bunny Poop is gluten free, dairy, free, soy free and egg free. It has the option to be vegan if you use Dandies Vegan Marshmallows.
It looks like the Easter bunny hopped by and left some… droppings. 🙂 Pink and blue and yes brown too. What colorful poo the Easter bunny has. I assure you, this Easter Bunny Poop does not taste like… well… like poop. It’s sweet, crunchy, chewy with a delicious coconut flavor. It has delicate colors that are completely natural – so no yucky food coloring here. Although this may look like Easter Bunny Poop, between you and me, it’s just an awesome vegan and gluten-free marshmallow cereal treat. Great for Easter or any other day of the year that you need a treat!
Natural Food Colorings
There are so many great things you can use instead of food coloring. They may not be quite as bright, but let’s be honest, our food should never be bright red or green or blue. That’s just not real food and it’s kind of scary we want to eat that. Since they are not as bright, they end up being a pastel hue. The pastel colors are perfect for this gluten-free Easter marshmallow treat.
What I use for Natural Food Coloring:

- Beet Root Juice Powder: Creates a purplish red color. Does not have a strong flavor if used in small amounts.
- Turmeric Root Powder (Curcumin): Creates a yellow to orange color depending on the amount used. Does have a strong flavor, but you only need a little bit to add a nice color.
- Blue Majik Powder
: Creates a bright blue color. Does not have a strong flavor if used in small amounts.
- Spirulina Powder
: Creates a green color. Does have a strong flavor, but you only need a little bit does add a nice color.

Easter Bunny Poop (Marshmallow Cereal Treat)
Ingredients
Blue Marshmallow Treats
- 2 cups marshmallows
- 2 tablespoons coconut oil
- 1 cup rice chex
- 1/8 teaspoon blue majik powder
- 1/4 cup sweetened shredded coconut
- 2 tablespoons mini dairy free chocolate chips
Pink Marshmallow Treats
- 2 cups marshmallows
- 2 tablespoons coconut oil
- 1 cup rice chex
- 1/4 teaspoon beet juice powder
- 1/4 cup sweetened shredded coconut
- 2 tablespoons mini dairy free chocolate chips
Instructions
- Get two large bowls, one for your blue treats and one for your pink treats. Add marshmallows and coconut oil to each bowl and microwave each bowl separately for 1 minute.
- Add the respective coloring to each bowl and mix in with marshmallows. The oil will look like it's separated from the marshmallows, that's ok. Add in your cereal and shredded coconut and mix well. Your hands work best here since the marshmallows just stick to spoons.
Last mix in your chocolate chips. You want to mix them in last so the marshmallows have a chance to cool. They will still melt a little, that's ok. - Spoon onto parchment paper lined baking sheet and refrigerate for about 2 hours or until they are solid.

My 2.5 year old and I made these today! Yum! I used non-vegan marshmallows and had to microwave a little longer than suggested to melt them. Even after that, they were difficult to mix.
But they’re delicious, gluten and dairy free and quick to make! My little guy loves making them!
Yes, marshmallow cereal treats of any kind tend to be difficult to mix! I suggest working fast while the marshmallows are still warm. You can even oil your hands then mix by hand so you can really control how you mix without crushing too much cereal! But other than that I’m so glad you enjoyed them!
